Ingredients:
  • Ice cubes, to serve
  • Mint leaves, to serve
  • 1 litre apple juice
  • 107.50 gm caster sugar
  • 3cm piece fresh ginger, peeled, sliced
  • 20.00 ml black tea leaves
  • 62.50 ml mint leaves, chopped
Instructions:
  • In a saucepan over medium-low heat, mix together apple juice, sugar, and 2 cups of cold water. Stir continuously for 3 to 4 minutes until the sugar is fully dissolved. Stir in ginger, bring the mixture to a boil, then reduce the heat to low and let it simmer for 5 minutes.
  • After taking the mixture off the heat, gently fold in tea leaves and finely chopped mint. Let it infuse for 10 minutes, then strain the liquid into a jug. Cover and refrigerate overnight, or until it's thoroughly chilled. Serve the refreshing drink over ice, garnished with fresh mint leaves.
