Delicious tropical mango-coconut muffins, perfect for the whole family.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup shredded coconut
  • 0.5 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup unsalted butter, melted
  • 1.5 cups canned mango puree
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with paper or foil liners.
  • In a bowl, mix flour, coconut, sugar, baking powder, cinnamon, and salt until combined.
  • In a separate bowl, mix eggs, butter, and vanilla extract until creamy. Stir in the flour mixture until smooth, then gently fold in the pureed mango.
  • Evenly distribute the batter into the prepared muffin cups.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 30 minutes.
