Spicy chocolate cupcakes with a kick of cayenne pepper and a pop of coffee essence.
Ingredients:
  • 0.75 cup shortening
  • 1.6666667461395 cups white sugar
  • 2 eggs
  • 1 teaspoon instant coffee granules
  • 1 pinch cayenne pepper
  • 2.25 cups all-purpose flour
  • 0.66666668653488 cup unsweetened cocoa powder
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt
  • 1.5 cups water
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare two 12-cup muffin pans by greasing them or lining 18 of the cups with paper baking cups.
  • Using an electric mixer, beat shortening and sugar in a medium bowl until light and fluffy. Add eggs one at a time, followed by vanilla, instant coffee, and cayenne pepper. In another bowl, combine flour, cocoa, baking powder, baking soda, and salt. Gradually mix dry ingredients into the batter, alternating with water until blended. Divide batter evenly into cups.
  • Put the cupcakes in the preheated oven until the tops bounce back, around 20 to 25 minutes. Let them cool in the pan on a wire rack. Once cooled, place them on a serving platter and frost to your liking.
