Indulge in the decadence of this simple and delicious chocolate cake - a crowd-pleaser guaranteed to satisfy your sweet cravings!
Ingredients:
  • 332.50 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 42.90 gm cocoa powder
  • 215.00 gm caster sugar
  • 260.00 gm buttermilk
  • 2 eggs
  • 125g butter, melted, cooled
  • 4.40 gm vanilla essence
  • 125g blueberries
  • 199.50 gm pure icing sugar
  • 15.00 gm cocoa powder
  • 20g butter, at room temperature, chopped
Instructions:
  • Preheat your oven to 180°C and lightly grease a 6cm-deep, 20cm round cake pan, then line the base with baking paper.
  • In a large bowl, sift together flour, bicarbonate of soda, and cocoa powder. Add sugar and stir to combine. In a separate jug, mix together buttermilk, eggs, melted butter, and vanilla. Create a well in the center of the dry ingredients and pour in the buttermilk mixture. Use an electric mixer to beat on low speed until well combined, then increase to high speed and beat for 3 to 4 minutes until thick and creamy.
  • Transfer the mixture into the prepared pan and bake for 40 to 45 minutes, or until a skewer inserted in the center comes out clean. Cool in the pan for 5 minutes, then invert onto a wire rack to cool completely.
  • Sift icing sugar and cocoa powder into a bowl. Mix in butter and 1 tablespoon of boiling water until smooth. Spread over cake, top with blueberries, let it set, slice, and serve.
