Creamy lemon ice cream bursting with fresh lemon flavor.
Ingredients:
  • 2 cups heavy whipping cream
  • 1.125 cups white sugar
  • 1 cup half-and-half cream
  • 3 tablespoons grated lemon zest
  • 5 large egg yolks
  • 0.75 cup fresh lemon juice
Instructions:
  • In a saucepan, bring heavy cream, sugar, half-and-half, and lemon zest to a gentle simmer over low heat. Stir and cook until sugar dissolves, approximately 5 minutes. Remove from heat, cover, and let steep for 10 minutes before using.
  • Uncover the saucepan and gently heat until simmering. In a medium bowl, beat egg yolks. Gradually whisk in 1 cup of the hot cream mixture into the eggs. Pour the egg mixture back into the saucepan with the cream. Cook and stir until it coats the back of a spoon, about 5 to 10 minutes. Transfer to a large bowl, cover, and refrigerate for 8 hours or overnight.
  • Combine the zesty lemon juice with the chilled ice cream mixture. Churn in a 4- to 5-quart ice cream maker following the manufacturer's instructions. Transfer the smooth ice cream to a sealed freezer container and let it sit in the freezer for approximately 4 hours to enhance the flavors before enjoying.
