Super Lemony Lemon Bars

Ariane Resnick made a new friend by bonding over lemons on Myspace.
Ingredients:
  • For the filling:
  • 2 Lisbon lemons, knobby ends trimmed off
  • 2 cups sugar
  • 4 large eggs
  • 1/4 teaspoon salt
  • For the crust:
  • 1 3/4 cups (188g) all-purpose flour
  • 3/4 cup unsalted butter, chilled and cut into cubes
  • 1/3 cup (35g) powdered sugar, plus more for sprinkling on top
  • 1/2 teaspoon salt
  • 1 large egg yolk
Instructions:
  • Prepare the lemons: Slice the lemons using a food processor with the second-to-thinnest blade attachment. Halve the lemons lengthwise if necessary. Alternatively, thinly slice the lemons to about 1/8 inch using a sharp knife on a cutting board. Remove any seeds. In a medium bowl, combine the sliced lemons with sugar. Cover the bowl tightly and refrigerate for 24 to 48 hours for the lemons to release their juices while macerating.
  • Preheat the oven to 350°F. Line and generously coat a glass or ceramic 9x9-inch or 7x11-inch baking dish with parchment and cooking spray.
  • Prepare the crust by combining flour, butter, powdered sugar, and 1/2 teaspoon salt in a food processor until pebbly, for about 30 seconds. Add the egg yolk and pulse for an additional 10 to 15 seconds until the mixture is crumbly and cohesive when pressed. Press the crust mixture into a baking dish, guiding it 1/2 inch up the sides evenly. Bake until golden at the edges for approximately 15 minutes. Then, reduce the oven temperature to 325°F in preparation for the lemon bars.
  • Prepare the filling by combining the lemon-sugar mixture, 4 eggs, and 1/4 teaspoon salt in a food processor. Pulse until the peels are chopped into 1/4- to 1/2-inch pieces, then spread the filling over the baked crust.
  • Bake the lemon bars until the edges are set and the center is slightly jiggly, about 25 minutes. Let them cool completely on the kitchen counter.
  • Serve: Dust the top with powdered sugar, cut into squares, and enjoy these deliciously gooey lemon bars. Please leave a review below if you loved this recipe!
