Vibrant, nutritious pancakes perfect for any meal. Store leftover batter for future breakfasts. Top with your favorite ingredients for a customizable treat. Delicious and versatile!
Ingredients:
  • 1 ripe avocado
  • 350 g mixed-colour cherry tomatoes
  • 100 g baby spinach
  • 3 spring onions
  • ½ a bunch of fresh coriander (15g)
  • 1 lime
  • extra virgin olive oil
  • 1 mug of self-raising flour
  • 1 mug of semi-skimmed milk
  • 300 g cottage cheese
  • hot chilli sauce
Instructions:
  • Prepare the ingredients for the salad by slicing the avocado, quartering the tomatoes, and adding a quarter of the spinach to a bowl. Then, slice the spring onions, add coriander leaves, and drizzle lime juice and olive oil on top. Season with salt and pepper, toss, and set aside. Blend the egg with flour, milk, remaining spinach, salt, and pepper until smooth. Heat a non-stick pan, add batter to make a thin pancake, and cook until golden. Assemble the pancakes by topping them with cottage cheese and the avocado salad. Drizzle with chilli sauce and serve with lime wedges and a fried egg on top, if desired. Enjoy!
