Surprise-in-the-Center Speckled Egg Cake

Celebrate spring with a stunning speckled egg cake featuring a vibrant layered surprise inside.
Ingredients:
  • 2 boxes yellow cake mix with pudding
  • Water, oil and eggs called for on cake mix boxes
  • 1/2 teaspoon yellow gel food color
  • 1 1/3 cups butter, softened
  • 12 cups powdered sugar
  • 1 tablespoon vanilla
  • 6 to 8 tablespoons milk
  • 16 drops blue food color
  • 1 tablespoon unsweetened baking cocoa
  • 1 1/2 tablespoons vanilla
  • Assorted candy and chocolate eggs, as desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and grease 4 (8-inch) round pans. Prepare cake mixes according to box instructions with water, oil, and eggs. Set aside 1 1/3 cups of batter in a small bowl. Divide remaining batter among the pans. Mix in 1/2 teaspoon of yellow food color with reserved batter until fully incorporated. Place 2/3 cup of the yellow batter in the center of two of the cakes.
  • Bake for 28 to 32 minutes until a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes before transferring to cooling racks. Allow to cool completely, approximately 1 hour.
  • In a large mixing bowl, cream butter with an electric mixer on low speed until smooth. Gradually mix in powdered sugar, one cup at a time, until well combined. Stir in 1 tablespoon of vanilla and milk, 1 to 2 tablespoons at a time, until fully incorporated. If the frosting is too thick, thin it out by mixing in additional milk, 1 teaspoon at a time. Set aside 1 1/2 cups of the frosting in a separate bowl. Mix blue food coloring into the remaining frosting until evenly colored. Stir 1/2 teaspoon of yellow food coloring into the reserved frosting until well mixed.
  • Using a serrated knife, level the top of the cakes. Place one cake layer without the yellow center, cut side up, on a cake plate and spread 1/2 cup of yellow frosting on top. Add the yellow-centered cakes, cut side up, and spread another 1/2 cup of yellow frosting. Place the remaining yellow-centered cake, cut side down, and spread the last 1/2 cup of yellow frosting. Finally, add the last cake layer, cut side down. Apply a thin layer of 1 cup of blue frosting to seal the crumbs on the side and top of the cake. Chill in the refrigerator for 30 minutes. Frost the cake with the remaining blue frosting.
  • Combine cocoa and vanilla in a small bowl. Splatter the mixture onto the cake using a food-safe brush and your finger to create a speckled appearance. Garnish the cake with candy eggs.
