Surprise-Inside Halloween Candy Cupcakes

Surprise-filled Devil's Food Cupcakes with spooky eyeballs, candies, and sprinkles, topped with creamy frosting swirls. Perfect for easy Halloween party treats, made using a simple scoop method.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Devil’s Food Cake Mix
  • 1/2 cup M&M’s® Minis® Candy-Coated Milk Chocolate Candies
  • 1 container (1.70 oz) Betty Crocker™ Spooky Sprinkles (about 1/3 cup)
  • 1 package (0.88 oz) Betty Crocker™ Dessert Decorations Candy Eyeballs
  • 2 tubs (16 oz each) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1 tube (0.67 oz) Betty Crocker™ Green Neon Gel Food Color (about 2 1/2 teaspoons)
Instructions:
  • Preheat oven to 375°F (350°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Prepare and bake cake mix according to package instructions for 24 cupcakes. Allow to cool in pans for 10 minutes before transferring to a cooling rack. Let cool completely for about 30 minutes before serving.
  • Scoop out the center of each cupcake using a melon baller, making sure to go about 1 inch deep. Set aside the center pieces.
  • In a small bowl, combine chocolate candies, 2 tablespoons of candy sprinkles, and candy eyeballs. Fill each cupcake with a heaping teaspoon of the candy mixture. Place back the center piece and gently press it on top of each cupcake.
  • Place the frosting in a large bowl and stir in the food color until well blended. Fill a decorating bag fitted with a medium star tip, pipe a decorative swirl on top of each cupcake, then sprinkle the remaining candy sprinkles on top. Store the cupcakes loosely covered at room temperature.
