Irresistible marshmallow chocolate cookies with pecans and cocoa, ready in less than an hour.
Ingredients:
  • 0.33333334326744 cup white sugar
  • 0.25 cup vegan margarine (such as Earth Balance®)
  • 0.25 cup brown sugar
  • 1 egg white
  • 1.5 teaspoons vanilla extract
  • 1 cup whole wheat pastry flour
  • 0.25 cup cocoa powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup semisweet chocolate chips (such as Ghiradelli® 60% Cacao)
  • 0.33333334326744 cup chopped pecans
  • 0.33333334326744 cup marshmallow cream
Instructions:
  • Heat your oven to 350°F (175°C).
  • Cream together white sugar, margarine, and brown sugar with an electric mixer until creamy. Mix in egg white and vanilla extract until well combined.
  • In a separate bowl, mix together flour, cocoa powder, baking soda, and salt. Gradually add the flour mixture to the sugar mixture, using a wooden spoon to combine. Fold in chocolate chips and pecans.
  • Using a teaspoon, place dollops of dough onto a baking sheet. Gently flatten the cookies and create a small indentation in the center of each one. Fill each indentation with a spoonful of marshmallow cream.
  • Bake in the preheated oven until golden brown for 8 to 10 minutes. Allow to cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely for about 30 minutes.
