Banana Prune Muffins

Surprisingly delicious and moist muffins with prunes. Low fat, indulgent treat. A must-try that will disappear quickly!
Ingredients:
  • 0.25 cup vegetable oil
  • 1 egg
  • 1 cup mashed banana
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 1 cup chopped pitted prunes
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a muffin pan by greasing and flouring it or using paper liners.
  • Combine sugar, oil, and eggs in a large bowl and beat until smooth. Add banana and vanilla and blend well. In a separate bowl, mix flour, baking powder, baking soda, salt, and cinnamon. Stir this into the egg mixture until just moistened. Mix in the prunes and spoon the batter into muffin cups.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into a muffin comes out clean.
