Swedish meatballs

Ingredients:
  • 1 celeriac
  • olive oil
  • a few sprigs of fresh lemon thyme
  • 1 mug of 10-minute wholegrain rice or basmati rice (300g)
  • 200 g baby spinach
  • 200 g higher-welfare lean beef mince
  • 200 g higher-welfare lean pork mince
  • ½ a bunch of fresh dill
  • 2 teaspoons caraway seeds
  • 1 swig of vodka
  • 4 teaspoons cranberry jam
  • 4 tablespoons single cream
  • 4 tablespoons fat-free natural yoghurt to serve
Instructions:
  • Prepare the ingredients by trimming, peeling, and dicing the celeriac. In a lidded casserole pan over medium heat, combine the celeriac with oil, salt, pepper, lemon thyme leaves, and boiling water. Cook covered on high heat, stirring regularly. In a small lidded pan, cook wholegrain or basmati rice with boiling water and salt. In a medium frying pan over high heat, shape the beef and pork mince, dill, salt, and pepper into meatballs and brown with caraway seeds. Once the celeriac is tender, add baby spinach and the cooked rice to the casserole pan. Adjust seasoning. Flambe the meatballs with vodka, then add cranberry jam, cream, and water. Simmer to create a sauce. Serve the meatballs and sauce with rice, garnished with dill and yoghurt.
