Skip IKEA, make homemade Swedish meatballs.
Ingredients:
  • 125.00 ml fresh breadcrumbs
  • 189.38 gm thickened cream
  • 250g pork mince
  • 250g beef mince
  • 1/2 brown onion, finely chopped
  • 1 egg, lightly beaten
  • 125.00 ml cold mashed potato
  • 1/4 tsp ground allspice
  • 30g butter
  • 30.00 ml plain flour
  • 382.50 gm beef stock
  • 18.30 gm worcestershire sauce
  • 73.13 gm cranberry sauce, to serve
  • Steamed green beans, to serve
  • Extra mashed potato, to serve
  • 40.00 ml fresh dill sprigs
Instructions:
  • In a bowl, mix breadcrumbs and 1/4 cup of cream. Let it sit for 5 minutes. Add mince, onion, egg, potato, and allspice. Season with salt and pepper. Mix thoroughly. Shape 2 level tablespoons of the mixture into balls.
  • In a large, deep frying pan over medium-high heat, heat oil. Brown meatballs in batches, turning occasionally, for 4 to 5 minutes until cooked through. Drain on paper towel.
  • In a pan over medium heat, melt the butter. Add flour and cook, stirring, for 1 minute until the mixture bubbles. Gradually stir in the stock, Worcestershire sauce, and remaining cream. Bring to a boil.
  • Place meatballs back in the pan. Allow them to simmer for 5 to 7 minutes, occasionally stirring, until they are fully cooked and the sauce has thickened. Serve the meatballs with cranberry sauce, beans, and extra mashed potatoes, then garnish with a sprinkle of dill.
