Delicious butter cookies filled with creamy lemon liqueur, perfect for any occasion. Swap Swedish liqueur for amaretto if desired.
Ingredients:
  • 1 cup butter, softened
  • 1.5 cups all-purpose flour
  • 6 tablespoons heavy cream
  • white sugar for dusting
  • 0.5 cup butter, softened
  • 0.75 cup confectioners' sugar
  • 2 teaspoons Swedish arrack punsch
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Combine 1 cup of butter and flour in a bowl until smooth and creamy. Mix in heavy cream and shape the dough into a ball.
  • Sprinkle white sugar on a cutting board. Roll out the dough to 1/4-inch thickness on the sugared surface. Cut dough into 24 circles using a 3-inch round cookie cutter, then slightly ovalize each circle by rolling with a rolling pin. Place cookies on an ungreased cookie sheet, spacing them about an inch apart.
  • Bake in the oven until the cookie edges are lightly golden, about 10-12 minutes. Cool briefly on the sheet before transferring to a cooling rack with a spatula.
  • Combine 1/2 cup of butter, confectioners' sugar, egg yolk, and Swedish arrack punsch in a bowl. Beat until smooth and creamy.
  • For each cookie sandwich, generously spread a rounded teaspoon of filling on one cookie and top with another cookie, bottom side down. Repeat for remaining cookies.
