Sweet and sour pork in foil recipe

Quickly prepare succulent pork parcels with microwave rice for a fast and delicious meal.
Ingredients:
  • 18.20 gm olive oil
  • 400g pork fillet, cut into 1cm thick slices
  • 1 red onion, coarsely chopped
  • 425g can pineapple slices in juice
  • 125ml (1/2 cup) Sweet & Sour Sauce
  • 1 large red capsicum, deseeded, coarsely chopped
  • 6.00 gm sesame seeds, toasted
  • 2 green shallots, thinly shredded
  • 450g packet microwave rice
Instructions:
  • Preheat your oven to 200°C (180°C fan forced). Heat half of the oil in a large frying pan over high heat. Sear half of the pork for 1 minute per side until golden brown. Transfer to a plate and repeat with the remaining oil and pork. Stir fry the onion in the same pan for 1-2 minutes until slightly softened. Set aside.
  • 1. Drain the pineapple, saving 2 tablespoons of the juice. Mix the reserved juice with sweet and sour sauce in a small bowl. 2. Tear four 30cm square sheets of foil and line them with baking paper sprayed with olive oil. 3. Distribute onion, capsicum, pork, and pineapple evenly among the prepared squares. Slightly pull up the edges of the foil.
  • Drizzle the sauce mixture over the filling, then securely wrap it in the foil and paper. Place on a baking tray and bake for 15 minutes or until the pork is cooked.
  • Unwrap the parcels and generously garnish with sesame seeds and shallots. Enjoy alongside microwave rice.
