Make homemade sweet and sour pork in your Instant Pot for a tasty meal, no takeout needed.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound boneless pork loin, cut into 3/4-inch cubes
  • 1.25 cups water, divided
  • 0.5 cup ketchup
  • 0.33333334326744 cup rice vinegar
  • 0.33333334326744 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoons minced fresh ginger
  • 1 teaspoon minced garlic
  • aluminum foil
  • 1 onion, vertically sliced
  • 1 cup chopped fresh pineapple
  • 1 red bell pepper, cut into large chunks
  • 1 green bell pepper, cut into large chunks
  • 2 tablespoons cornstarch
  • 1 tablespoon toasted sesame seeds
Instructions:
  • Preheat a multi-functional pressure cooker, like an Instant Pot, using the Saute function. Heat oil until sizzling, then sear pork cubes in batches until golden all over, around 5 minutes. Combine all pork in the pot and switch off the Saute mode.
  • Combine 3/4 cup water, ketchup, rice vinegar, pineapple juice, brown sugar, soy sauce, ginger, and garlic in a small bowl. Pour the mixture over the pork and stir well.
  • Secure the lid tightly and activate the high pressure setting as per your appliance's guidelines. Set the timer for 5 minutes and patiently wait for 10 to 15 minutes for the pressure to build up.
  • Follow the manufacturer's instructions to naturally release pressure for about 5 minutes. Then, perform a quick-release to release any remaining pressure. Unlock the lid, remove, and transfer the pork to a plate using a slotted spoon. Cover with foil to keep warm.
  • Using the Saute mode, stir in the onion, pineapple, red bell pepper, and green bell pepper. Cook until the vegetables begin to soften, about 6 to 7 minutes.
  • Mix cornstarch with the remaining water until smooth. Add the mixture to the pot. Stir constantly as the sauce thickens to your liking, about 2 minutes. Add the cooked pork back to the pot and heat until warmed through. Sprinkle with sesame seeds before serving.
