Quick and easy Instant Pot sweet and sour chicken with crispy and tender texture. Perfect for a flavorful midweek dinner over rice.
Ingredients:
  • 2 tablespoons olive oil
  • 4 boneless chicken breast, cut into cubes
  • 1 cup chicken broth
  • 0.5 cup brown sugar
  • 0.5 cup soy sauce
  • 1 carrot, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon minced fresh ginger root
  • 1 teaspoon chili powder
  • 2 tablespoons cornstarch
  • 1 teaspoon sesame seeds
Instructions:
  • Heat olive oil in a multi-functional pressure cooker by selecting the Saute function. Add chicken cubes and cook until golden, stirring constantly, for about 3 minutes. Stir in chicken broth, brown sugar, soy sauce, carrot, garlic, ginger, and chili powder. Close and lock the lid, then select high pressure following the manufacturer's instructions and set the timer for 7 minutes. Allow 10 to 15 minutes for pressure to build.
  • Follow the manufacturer's instructions to release pressure naturally for about 10 minutes, then carefully release any remaining pressure using the quick-release method for about 5 minutes. Unlock and remove the lid, then select the Saute function again.
  • Combine cornstarch with water until smooth. Add to pot and stir until thickened, around 4 minutes. Serve and garnish with sesame seeds.
