Make Mongolian beef in the Instant Pot with flank steak, onions, peppers, and roasted garlic.
Ingredients:
  • 1 head garlic
  • 2 pounds flank steak
  • salt and ground black pepper to taste
  • 1 tablespoon olive oil
  • 2 sweet onions (such as Vidalia®), cut into wedges
  • 0.66666668653488 cup dark brown sugar
  • 0.5 cup water
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 0.5 cup liquid amino acid (such as Bragg®)
  • 0.5 teaspoon minced fresh ginger root
  • 3 tablespoons water
  • 2 tablespoons arrowroot powder
  • 3 green onions, cut in 1-inch pieces
Instructions:
  • Preheat the oven to 350°F (175°C) to get it nice and toasty for your culinary creation.
  • Coat unpeeled garlic cloves with a drizzle of fragrant olive oil and envelop them in a snug aluminum foil wrapping.
  • Roast garlic cloves in the preheated oven until golden and soft, approximately 20 minutes. Allow to cool slightly, then peel off the skin before using.
  • Season the steak generously with salt and pepper. Heat oil in a multi-functional pressure cooker like an Instant Pot using the Saute function. Sear steak in batches until beautifully browned, around 8 minutes. Avoid overcrowding the pot. Plate the beef once done.
  • - Saute garlic in the pot until fragrant, around 1 minute. - Mix in onions, brown sugar, 1/2 cup water, green bell pepper, red bell pepper, liquid aminos, and ginger. - Stir well to combine. - Add browned beef along with any juices.
  • Securely seal the lid and set to high pressure as per manufacturer's guidelines. Cook for 12 minutes, then wait for pressure to build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following manufacturer's instructions for about 5 minutes. Then unlock and remove the lid.
  • Whisk 3 tablespoons of water with arrowroot powder until smooth. Pour into the pot of sauce, stirring constantly. Bring to a boil in Simmer mode and keep stirring until sauce thickens, about 5 minutes. Finally, mix in the green onions.
