Whip up quick pork meatballs with a tangy twist for a delicious weeknight dinner in just 30 minutes.
Ingredients:
  • 500g Free Range Pork Mince
  • 80ml soy sauce
  • 25g breadcrumbs
  • 62.50 ml coriander, finely chopped
  • 36.40 gm peanut oil
  • 440g pkt hokkien noodles
  • 227g can pineapple chunks in juice
  • 95g tomato sauce
  • 30.00 ml white vinegar
  • 2 cloves garlic, crushed
  • 5.00 gm cornflour
  • 1 red onion, chopped,
  • 1 red capsicum, chopped
  • Coriander sprigs, to serve
Instructions:
  • In a bowl, mix the pork, half of the soy sauce, breadcrumbs, and chopped coriander. Season with your favorite herbs and spices. Shape the pork mixture into even-sized meatballs. Heat half of the oil in a large deep frying pan over medium heat. Cook the meatballs, turning occasionally, for about 5 mins or until fully cooked. Place the meatballs on a heatproof plate to serve.
  • Place the noodles in a heatproof bowl and cover with boiling water. Let them stand for 2 minutes, then use a fork to separate and drain them.
  • Drain the pineapple, keeping the juice. In a jug, mix the reserved pineapple juice with tomato sauce, vinegar, garlic, remaining soy sauce, cornflour, and 2 tbsp water.
  • In the same pan, heat the remaining oil over medium-high heat. Saute the onion and capsicum for 3 minutes until the onion softens. Stir in the pineapple, tomato sauce mixture, meatballs, and noodles, and cook for another 3 minutes until heated through. Serve the pork meatballs garnished with coriander sprigs.
