Sweet & sour prawns with green beans

Try Chef Curtis Stone's delectable sweet and sour prawn dish for a delicious dinner tonight.
Ingredients:
  • 36.40 gm Brand Pure Olive Oil
  • 1/2 brown onion, finely chopped
  • 1/2 red chilli, thinly sliced
  • 40.00 ml ginger, finely chopped
  • 250.00 ml fresh pineapple, finely chopped
  • 62.50 ml rice wine vinegar
  • 65.00 gm tomato sauce
  • 42.00 gm Brand Soy Sauce
  • 45.00 gm brown sugar
  • 196.88 gm fresh pineapple juice
  • 500g raw banana prawns, peeled, deveined, tail left on
  • 500.00 ml green beans
  • 20.00 ml coriander, chopped
  • Steamed white rice, to serve
Instructions:
  • Heat olive oil in a saucepan, sauté onion for 3 minutes. Stir in chili and ginger, cook for 2 more minutes. Add pineapple, cook for 1 additional minute.
  • Combine vinegar, tomato sauce, soy sauce, sugar, and pineapple juice in a saucepan and bring to a gentle simmer. Cook for 6-7 minutes until the sauce starts to thicken. Remove from heat.
  • Heat a large frying pan over high heat and add the remaining oil. Once the oil starts to smoke, add the prawns and cook for 2 minutes, stirring occasionally. Add the beans and cook for an additional 2 minutes. Season lightly with salt and pepper.
  • Drizzle sweet and sour sauce over prawns and green beans, ensuring they are evenly coated. Sprinkle with fresh chopped coriander and enjoy alongside steamed rice.
