Sweet and sour vegetable stir-fry

Whip up a quick and flavorful sweet and sour veggie stir-fry in just 20 minutes!
Ingredients:
  • 27.30 gm peanut oil
  • 1 brown onion, halved, sliced
  • 1 carrot, sliced diagonally
  • 1/2 red capsicum, cut into 2cm pieces
  • 100g button mushrooms, sliced
  • 400g can baby corn spears, drained, halved
  • 2 green onions, cut into 4cm lengths
  • Steamed white long-grain rice, to serve
  • 10.00 gm cornflour
  • 112.50 gm white sugar
  • 82.50 ml apple cider vinegar
  • 65.63 gm apple juice
  • 65.00 gm tomato sauce
  • 6.10 gm Worcestershire sauce
  • 5.30 gm soy sauce
  • 6.10 gm oyster sauce
  • 0.60 gm salt
Instructions:
  • In a bowl, whisk together cornflour and 2 tablespoons of water until smooth. Add in sugar, vinegar, apple juice, tomato sauce, Worcestershire sauce, soy sauce, oyster sauce, and salt. Stir until fully combined and set aside.
  • Preheat a wok over high heat. Add oil and swirl to coat. Stir in garlic and brown onion and stir-fry for 1 minute. Quickly add carrot and capsicum, stir-fry for another minute. Lastly, incorporate mushroom and corn and stir-fry for another minute. Enjoy!
  • Combine the sauce mixture and pour it into the wok. Stir-fry until the sauce thickens, about 1 minute 30 seconds. Mix in green onions and serve with rice.
