Tangy honey vinegar braised pearl onions.
Ingredients:
  • 1 to 1 1/2 pounds boiling or pearl onions
  • Kosher salt
  • 3 tablespoons extra virgin olive oil or butter
  • 3 tablespoons cider, malt or white wine vinegar
  • 1 tablespoon honey
Instructions:
  • Prepare the onions: For pearl or small cipollini onions, blanch in boiling water for a minute and then shock in ice water. Slice off the root and stem ends to easily remove the skin. For larger boiling onions, simply slice off the stem end and peel as usual.
  • Simmer onions in a pot of salted boiling water for 4 to 10 minutes until tender, adjusting time for smaller onions. Drain well.
  • Sauté the onions: Heat olive oil in a pan over medium-high heat. Add the onions and cook until they are nicely browned on a few sides, about 4 to 5 minutes.
  • Mix honey and vinegar until honey dissolves, then add it to a hot frying pan. Carefully coat onions in the mixture, reduce heat to medium, and sprinkle with salt.
  • Reduce the vinegar-honey mixture: Simmer until thickened to a syrupy consistency, ensuring the onions are evenly coated. Serve warm or at room temperature, garnished with a sprinkle of fleur de sel, if desired.
