Spicy herb puree elevates sweet & spicy marinated chicken thighs.
Ingredients:
  • 1 jalapeno pepper
  • 4 cloves garlic
  • 1 shallot
  • 3 tablespoons olive oil, divided
  • salt and ground black pepper to taste
  • 0.5 teaspoon dried parsley
  • 0.5 teaspoon dried thyme
  • 6 skinless, boneless chicken thighs
  • 0.5 cup white wine
  • 1 lime, juiced
  • 1 tablespoon honey, or more to taste
  • 0.5 cup chicken broth
Instructions:
  • In a food processor, blend jalapeno pepper, garlic, shallot, and 1 tablespoon of olive oil, salt, and black pepper until smooth. Mix in parsley and thyme until fully combined.
  • Massage the jalapeno pepper mixture onto the chicken thighs, then transfer them to a platter, cover with plastic wrap, and let them marinate in the refrigerator for at least 1 hour, but ideally up to 24 hours.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In an oven-safe skillet over medium-low heat, warm up 2 tablespoons of fragrant olive oil. Gently sear the chicken thighs in the flavorful oil until they turn a beautiful golden brown on each side, which should take about 5 minutes per side. Once done, elegantly transfer the chicken to a serving platter, ensuring to keep all the delicious drippings in the skillet for added flavor.
  • Lower the skillet heat, then pour wine into it and bring to a boil while scraping the flavorful bits from the pan using a wooden spoon. Add lime juice and honey to the wine, simmer for 5 minutes to slightly reduce the liquid volume. Place the chicken back in the skillet and pour in the broth.
  • Bake in the preheated oven until the sauce thickens and the chicken is fully cooked, about 20 minutes. Check with an instant-read thermometer for a minimum internal temperature of 165 degrees F (74 degrees C).
