Family-friendly chicken lettuce cups with sweet chili sauce by Curtis Stone.
Ingredients:
  • 63.00 gm Brand Soy Sauce
  • 32.00 gm Brown Sugar
  • 2 cloves garlic, finely chopped
  • 1 spring onion, thinly sliced, green and white sections separated
  • 500g chicken thigh fillets, from the deli
  • Olive oil, for baking
  • 500.00 gm water
  • 200.00 gm Brand Long Grain White Rice
  • 12 baby cos lettuce leaves
  • 1 medium carrot, julienned into 2mm strips
  • 88.00 gm Brand Sweet Chilli Sauce
  • 40.00 ml fresh coriander leaves
Instructions:
  • In a large bowl, mix together soy sauce, brown sugar, garlic, and spring onion whites. Add the chicken and toss until well-coated. Cover with plastic wrap and refrigerate for 1-4 hours.
  • Preheat your oven to 180C (160C fan forced). Take the chicken out of the fridge and lay it on a lightly oiled baking tray. Bake for 30-35 minutes until cooked through, flipping it halfway through cooking.
  • Boil water in a small saucepan and cook the rice following the package instructions.
  • Take the chicken out of the oven and let it rest for 5-7 minutes. Move the chicken to a cutting board, keeping the pan juices. Slice the chicken thinly into 1/2 cm strips and put them in a large bowl. Combine the remaining pan juices with the chicken, then add spring onion greens and carrot. Mix thoroughly.
  • Serve by filling crisp lettuce cups with the flavorful chicken mixture, and top with a drizzle of sweet chili sauce and fresh cilantro. Enjoy alongside steamed rice.
