Sweet Corn Muffins with Real Corn

Moist corn muffins made with cream-style corn, a delightful treat for any Mexican-inspired meal.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 cup white sugar
  • 0.75 cup cornmeal
  • 1 tablespoon baking powder
  • 1 (14.5 ounce) can cream-style corn
  • 2 eggs, beaten
  • 0.5 cup applesauce
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease 18 muffin cups.
  • Combine flour, sugar, cornmeal, baking powder, and salt in a large mixing bowl. Blend in cream-style corn, eggs, applesauce, and 1/2 cup milk using an electric hand mixer for 1 minute. Pour in the rest of the milk and beat until well combined. Fill muffin tins 3/4 full with batter.
  • Bake in the preheated oven for 25 to 30 minutes until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
