Sweet leek carbonara

Savoury leek and thyme carbonara with cracked black pepper, slow-cooked for enhanced flavors.
Ingredients:
  • 2 large leeks
  • 4 cloves of garlic
  • 4 sprigs of fresh thyme
  • 1 knob of unsalted butter
  • 300 g dried spaghetti
  • 50 g Parmesan or pecorino cheese plus extra to serve
  • 1 large egg
Instructions:
  • Prep the leeks, garlic, and thyme. Sauté them in butter and oil until fragrant. Add water, cover, and simmer for 40 minutes. Season. Cook pasta according to package directions and set aside some cooking water. Mix cheese and egg in a bowl. Stir cheese mixture into pasta. Adjust consistency with cooking water. Season generously with pepper. Serve with a glass of Italian white wine. Enjoy!
