Ingredients:
  • 800g beef rump steak, cut into 2cm pieces
  • 62.50 gm mango and ginger chutney
  • 250.00 ml couscous
  • 250.00 gm boiling water
  • 2 roma tomatoes, finely chopped
  • 4 green onions, thinly sliced
  • 125.00 ml chopped fresh mint leaves
  • 65.63 gm lemon juice
  • Olive oil cooking spray
Instructions:
  • Skewer the beef. Mix chutney with 2 tablespoons cold water in a dish. Add beef, season with salt and pepper, and coat well. Chill for 30 minutes, if possible.
  • Place the couscous in a heatproof bowl, then pour in the boiling water. Cover and let it stand for 5 minutes. Fluff the couscous with a fork to separate the grains, then mix in the tomato, onion, mint, and lemon juice. Season with salt and pepper to taste.
  • Prepare the barbecue plate or chargrill by spraying it with oil and heating it over medium-high heat. Cook the skewers, turning occasionally, for 6 to 7 minutes until they reach your desired level of doneness. Serve the skewers with couscous.
