Whip up a luscious peach and ricotta cheese filling for your delectable sweet crepes!
Ingredients:
  • 2 cups ricotta cheese
  • 1 cup confectioners' sugar
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon ground nutmeg
  • 1 (21 ounce) can peach pie filling
Instructions:
  • Strain ricotta cheese in cheesecloth over a bowl for 12 to 24 hours.
  • Mix together the ricotta, confectioners' sugar, cinnamon, vanilla extract, and nutmeg in a large bowl, then chill in the refrigerator right away.
  • In a nonstick pot, spread peach pie filling and add lemon juice. Cook over medium-low heat, stirring with a heat-resistant rubber spatula until bubbles start to form. Roll filling to the center of the pan using the spatula, then spread again. Repeat until filling resembles honey.
  • Transfer the hot filling into a container and let it cool for 20 to 30 minutes.
  • Remove the cream filling from the refrigerator, then mix the fruit mixture with cream in a separate bowl, adding one spoonful of each at a time until the mixture resembles cake frosting. Chill until serving.
