Delicious cucumber, onion, and bell pepper relish - perfect for hot dogs or mixed into macaroni salad!
Ingredients:
  • 8 medium cucumbers, chopped
  • 2 medium onions, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 0.5 cup pickling salt
  • 2 cups cider vinegar
  • 1 tablespoon celery seed
  • 1 tablespoon mustard seed
  • 3.5 cups white sugar
Instructions:
  • In a large bowl, toss together cucumbers, onions, and bell peppers. Sprinkle pickling salt over the vegetables and cover with cold water. Allow to soak for 2 hours. Drain well in a colander before using.
  • Check six pint-sized jars for cracks and rust on the rings, and discard any damaged ones. Place the jars in simmering water until the relish is completed. Wash new lids and rings in warm soapy water.
  • In a large, heavy stainless steel pot, combine vinegar, celery seed, and mustard seed. Stir in sugar and bring to a boil, making sure the sugar dissolves within 2 to 3 minutes. Add drained vegetables and return to a boil, which may take up to 10 minutes. Remove from heat.
  • Fill hot, sterilized jars with relish, leaving 1/4 inch of space at the top. Gently remove air bubbles by running a clean knife or spatula along the insides. Wipe the rims clean with a moist paper towel to ensure a tight seal, then secure with lids and screw tightly.
  • Fill a large stockpot halfway with water and bring to a boil with a rack placed at the bottom. Using a holder, carefully lower jars 2 inches apart into the boiling water. Add more boiling water if needed to cover the jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • After cooking, cool the jars in the stockpot with space in between for 12 to 24 hours. Check the lids by pressing the center to ensure they are secure. Remove the rings for storage and store in a cool, dark place.
