Delicious sweet potato and tangy goat cheese elevate any pizza.
Ingredients:
  • 440g pkt pizza bases
  • 2 garlic cloves, crushed
  • 60ml (1/4 cup) extra virgin olive oil
  • 430g sweet potato (kumara), peeled, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 20.00 ml chopped fresh rosemary
  • 40.00 ml pine nuts
  • 100g (1 cup) coarsely grated mozzarella
  • 120g soft goat’s cheese, crumbled
  • 150g pkt mixed salad leaves
  • 31.50 gm fresh lemon juice
Instructions:
  • Preheat your oven to a toasty 230°C and gently position the pizza bases on 2 spacious baking trays.
  • Mix together minced garlic and 3 teaspoons of oil in a bowl. Spread the mixture over the pizza bases. In another bowl, toss sweet potato, onion, and rosemary with the remaining 3 teaspoons of oil. Evenly distribute this mixture over the pizzas. Top with pine nuts, mozzarella, and goat cheese. Bake for 12-15 minutes until sweet potato is soft.
  • In a bowl, add salad leaves. Mix lemon juice and the remaining oil in a jug, then drizzle over the salad. Toss to coat evenly. Serve the pizza alongside the salad.
