Sweet potato, pesto, spinach and feta roulade

Roll up delightful roulade with sweet potato, spinach, and pesto filling.
Ingredients:
  • 40g unsalted butter
  • 35g plain flour
  • 250ml milk
  • 60 g finely grated Parmesan
  • 3 eggs separated
  • Fresh herbs, to serve
  • Parmesan, shaved, to serve
  • 500g sweet potato, peeled, chopped
  • 60ml cream
  • 150g baby spinach leaves
  • 40.00 gm pesto
  • 150g feta, crumbled
Instructions:
  • Preheat the oven to 200°C. Grease and line a 28 x 32cm shallow Swiss roll tin with non-stick baking paper. Melt butter in a small pan over low-medium heat, stir in flour for 1 minute, then remove from heat. Gradually whisk in milk. Return to heat and cook until thickened. Remove from heat, stir in half the parmesan and egg yolks. Transfer to a large bowl and rest for 5 minutes. Whisk egg whites until firm peaks form. Gently fold egg whites into cheese mixture. Spread mixture into prepared tray. Bake for 10-15 minutes until golden.
  • While you wait, boil the sweet potato in salted water for 8-10 minutes until tender. Then, drain and mix in the cream and pepper, season generously, and set aside.
  • Prepare the spinach filling by placing the spinach in a large heatproof bowl and covering it with boiling water. Let it sit for 30 seconds or until wilted, then drain and refresh under cold running water. Squeeze out excess liquid, chop the spinach, and mix it with pesto and feta in a bowl.
  • 1. Cover work surface with a clean tea towel and non-stick baking paper. Sprinkle with remaining parmesan. 2. Flip the roulade onto the tea towel, remove the baked-on paper. Roll up the roulade starting from the closest short side, using the tea towel as a guide. 3. Let it sit for 3-4 minutes, then carefully unroll and cool for 3-5 minutes. 4. Spread sweet potato filling over the roulade, then top with spinach mixture. 5. Roll up the roulade without paper to enclose the filling. 6. Serve with fresh herbs and parmesan shavings. Enjoy warm or cold.
