Sweet potato and feta 'sausage' rolls

Try these delicious sweet potato and feta sausage rolls for a simple, satisfying vegetarian appetizer or snack.
Ingredients:
  • 1kg sweet potato, peeled, cut into 2cm-pieces
  • 1 brown onion, finely chopped
  • 55g (1/2 cup) walnuts
  • 200g Danish style feta, crumbled
  • 1/2 tsp finely chopped fresh rosemary
  • Pinch of ground cinnamon
  • 2 sheets frozen puff pastry, just thawed
  • 1 egg, lightly whisked
  • 18.00 gm sesame seeds
  • Greek yoghurt, to serve
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare 2 baking trays by lining them with baking paper.
  • Spread out the sweet potato and onion on separate trays. Bake for 30-40 minutes, or until tender, taking out the onion earlier if done. Let them cool.
  • Roast the walnuts in the oven until toasted, then let them cool before chopping.
  • Preheat oven to 200C/180C fan forced. In a large bowl, gently crush the sweet potato with a fork. Add onion, feta, walnuts, rosemary, and cinnamon. Season with salt and pepper. Mix everything together using your hands until well combined.
  • Cut each sheet of pastry in half. Take a quarter of the sweet potato mixture and create a log shape along one long edge. Brush the opposite long edge with egg wash. Roll up the pastry to enclose the filling. Cut each roll into 3 pieces and place them seam-side down on the trays. Repeat the process with the rest of the sweet potato mixture and pastry.
  • Coat pastry with beaten egg, then generously sprinkle with sesame seeds. Bake for 25 minutes, or until beautifully golden. Enjoy with a dollop of creamy yogurt served on the side.
