Easy and delicious sweet potato soup with a perfect balance of sweetness and spice, ready in no time!
Ingredients:
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 1 large clove garlic, minced
  • 2 pounds sweet potatoes, peeled and cut into 1/2-inch cubes
  • 6 cups vegetable broth
  • 2 cups salsa
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons lime juice
Instructions:
  • In a large saucepan over medium-low heat, sauté onion and garlic in oil until soft and translucent, about 10-15 minutes. Add sweet potatoes and stir to coat evenly.
  • Stir in broth until well combined with the potato mixture, then simmer until potatoes are tender, about 15 to 20 minutes. Remove from heat and mix in salsa, salt, and black pepper to enhance the flavors of the soup.
  • Carefully transfer the soup into a blender, making sure not to fill it more than half full. Secure the lid tightly and pulse a few times, then blend until smooth in batches. Reheat the soup in a saucepan over medium-low heat, and stir in the lime juice once it's hot.
