Sumptuous spiraled sweet potatoes sautéed, topped with poached eggs, avocado, sausage, and salsa in bowls.
Ingredients:
  • 2 teaspoons olive oil, divided
  • 1 cup ground sausage
  • 2 large Eggland's Best Eggs
  • 1 large sweet potato
  • Salt and pepper
  • 0.5 cup salsa
  • 1 avocado, diced
Instructions:
  • Step up the flavor by warming 1 teaspoon of olive oil in a medium pan over medium-high heat. Sear the ground sausage until beautifully browned, about 5 to 7 minutes.
  • As the sausage sizzles, fill a large pot with a few inches of water and bring it to a gentle simmer over medium-high heat.
  • Carefully crack Eggland's Best eggs into a ramekin. Swirl the simmering water gently to create a whirlpool. Gently slide each egg into the water, cook for 3 minutes, then lift out with a slotted spoon and drain on paper towels.
  • Spiralize the sweet potato into noodles while the eggs are poaching.
  • In a large skillet over medium heat, heat another teaspoon of olive oil. Cook the sweet potato noodles until they start to soften, about 5 to 7 minutes. Season with salt and pepper.
  • Place the cooked sweet potato noodles in a large bowl, then mix in the drained ground sausage and salsa, ensuring everything is well combined.
  • Split the noodles and sausage evenly between two bowls. Garnish each bowl with diced avocado and a perfectly poached egg on top.
