Summer veg and sweet potato chip bowl recipe

Wholesome veggie bowl perfect for any meal, packed with nutritious goodness to hit your daily veggie goals.
Ingredients:
  • 600g sweet potato, peeled, cut into batons
  • 2.50 gm paprika
  • 3.75 gm ground cumin
  • 250g green beans, trimmed
  • 2 bunches asparagus, trimmed
  • 21.00 gm fresh lemon juice
  • 20.00 ml white balsamic vinegar
  • 100g baby spinach
  • 4 eggs, poached
Instructions:
  • Preheat oven to 200C/180C fan forced. Line a baking tray with baking paper and arrange sweet potato on top. Season with paprika and 1 tsp cumin, then lightly spray with oil. Bake for 25 minutes until tender.
  • While the beans and asparagus are cooking, prepare the dressing by mixing the lime juice, balsamic vinegar, olive oil, and the rest of the cumin in a small bowl. Season with salt and pepper to taste.
  • Distribute spinach, sweet potato, beans, and asparagus evenly among plates.
