Super protein chicken crunch salad recipe

Crunchy fruit and veg salad with sweet apples, lean chicken, and almonds for protein. Balanced with creamy yogurt and zesty lemon juice. Perfect for gatherings or a refreshing summer lunch. High protein, low calorie, gluten free, and low fat. A salad with it all!
Ingredients:
  • 200g snow peas, trimmed
  • 2 (about 180g each) cooked skinless chicken breasts, chopped
  • 4 celery sticks, finely chopped
  • 1 large Lebanese cucumber, deseeded, finely chopped
  • 1 large red apple, cored, finely chopped
  • 130g (½ cup) natural yoghurt
  • 42.00 gm fresh lemon juice
  • 5.90 gm Dijon mustard
  • 20.00 ml chopped fresh chives
  • 2 baby cos lettuce, coarsely chopped
  • 35g (1/3 cup) flaked almonds, lightly toasted
Instructions:
  • Place snow peas in a heatproof bowl and cover with boiling water. Let sit for 30 seconds. Quickly rinse under cold water and drain.
  • In a large bowl, mix together the chicken, celery, cucumber, apple, and snow pea.
  • In a small bowl, combine the yogurt, lemon juice, mustard, and chives. If the dressing is too thick, stir in 1-2 tsp of water to reach desired consistency.
  • Combine the dressing with the chicken mixture, tossing gently until combined. Mix in the lettuce and half of the almonds, tossing gently again. Serve immediately and sprinkle with the remaining almonds.
