Hearty sweet potato and broccoli soup - a delectable dinner option.
Ingredients:
  • 1 tablespoon olive oil
  • 1 large onion, chopped (1 cup)
  • 1 leek, cut in half lengthwise, rinsed, sliced thinly
  • 3 1/2 cups vegetable broth or reduced-sodium chicken broth
  • 3 medium sweet potatoes, peeled, cut into 1-inch pieces (4 cups)
  • 1 medium apple, peeled, cored, cut into 1-inch pieces
  • 2 cups chopped fresh broccoli florets
  • 1 tablespoon water
  • 6 tablespoons reduced-fat sour cream
  • 1/2 medium apple, cut into 12 thin slices
Instructions:
  • In a 4-quart saucepan, warm the oil over medium heat. Sauté the onion and leek for 4 minutes until softened. Add broth, sweet potatoes, and apple; bring to a boil, then simmer covered for 20 minutes until sweet potatoes are tender.
  • In a small microwave-safe bowl, combine the broccoli and water. Cover with plastic wrap and microwave on High for 1 minute and 30 seconds, or until broccoli is crisp-tender. Set aside.
  • Blend one-third of the soup mixture in a blender or food processor until smooth. Repeat twice with the remaining soup mixture. Return blended soup to the saucepan, add broccoli, cover, and heat on low for about 10 minutes until hot.
  • Ladle soup into 6 bowls, then garnish each with a dollop of sour cream and 2 apple slices before serving.
