Creamy sweet potato casserole topped with toasted marshmallows, a holiday favorite.
Ingredients:
  • 5 sweet potatoes, peeled and sliced
  • 0.5 cup packed brown sugar
  • 0.25 cup reduced-fat margarine
  • 3 tablespoons orange juice
  • 1 pinch ground cinnamon
  • 1 (10.5 ounce) package miniature marshmallows
Instructions:
  • Collect all your ingredients and preheat the oven to 350°F (175°C).
  • In a large saucepan, cover the sweet potatoes with water and bring to a boil. Cook until tender, approximately 15 minutes. Drain and mash the sweet potatoes.
  • Combine the mashed sweet potatoes with brown sugar, margarine, orange juice, and cinnamon in a large bowl. Mix using an electric mixer until well blended.
  • Evenly distribute the mixture into a 9x13-inch baking dish, then generously sprinkle marshmallows on top.
  • Bake in the oven until the casserole is heated through and the marshmallows are puffed and golden brown, about 25-30 minutes.
