Elevate sweet potatoes by topping them with baked marshmallows for a delicious Thanksgiving treat.
Ingredients:
  • 1.5 pounds sweet potatoes
  • 2 tablespoons butter, melted
  • 1 egg
  • 0.75 teaspoon salt
  • 2 tablespoons butter, cubed
  • 1 (10.5 ounce) package miniature marshmallows
Instructions:
  • In a saucepan, immerse sweet potatoes in water, then bring to a gentle boil over medium-high heat. Reduce heat and simmer until tender, approximately 20 minutes. Drain and mash the sweet potatoes.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a casserole dish.
  • In a large bowl, whip together mashed sweet potatoes, melted butter, egg, honey, and salt using an electric mixer until smooth. Transfer the velvety mixture to the casserole dish.
  • Sprinkle with cubed butter and cover with fluffy marshmallows.
  • Place in the preheated oven and bake until marshmallows are beautifully golden brown, for approximately 15 minutes. Serve promptly.
