Holiday classic sweet potato casserole: mashed sweet potatoes with cinnamon, brown sugar, and toasted marshmallow topping.
Ingredients:
  • 6 large sweet potatoes, peeled and cut into chunks
  • 1 cup white sugar
  • 0.5 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 tablespoon butter, softened
  • 1 cup miniature marshmallows, or as needed
Instructions:
  • In a large pot, cover sweet potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, about 20 minutes. Drain the sweet potatoes.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease a deep casserole dish.
  • Mash potatoes until smooth in a bowl. Mix in both sugars, cinnamon, and butter until fully incorporated. Transfer to casserole dish and top with miniature marshmallows.
  • Bake until marshmallows are golden brown, approximately 30 minutes in the preheated oven.
