Sweet Potato Jack-o-Lanterns with Cinnamon Sugar

Sweet potato jack-o-lanterns baked, buttered, and coated in cinnamon sugar.
Ingredients:
  • 1 (1 1/2 to 2 pound) sweet potato, in a even cylindrical shape if possible, wide enough for your cookie cutter form to cut out patterns
  • 3 tablespoons butter, melted (for dipping)
  • 6 tablespoons white granulated sugar (for dredging)
  • 1 teaspoon ground cinnamon
Instructions:
  • Peel the sweet potato and slice into 1/4 inch rounds. Transform each round into a pumpkin shape using a pumpkin-shaped cookie cutter. Use a paring knife to delicately carve out eyes and mouths. Feel free to skip this step if it seems too tricky.
  • Arrange the sweet potato rounds on a lined baking sheet, bake at 450°F (230°C) for about 35 minutes until golden and cooked through. Take out of the oven.
  • Melt butter on the stove or in the microwave, then transfer to a small bowl. Combine sugar and cinnamon in another bowl.
  • Coat each sweet potato round in melted butter, then in the cinnamon sugar mixture. Place on a rack over a baking sheet to dry before serving and enjoy!
