Veggie Shepherd's pie with sweet potato mash.
Ingredients:
  • 1.5 pounds sweet potatoes, peeled and chopped
  • 2 tablespoons soft, non-hydrogenated margarine
  • 0.25 teaspoon fresh ground pepper
  • 2 teaspoons Spectrum® Canola Oil
  • 1 (340 gram) package Yves Veggie Cuisine® Original Veggie Ground Round
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup Imagine® Low Sodium Organic Vegetable Broth
  • 1 cup combined, Yves Veggie Cuisine® sweet peas, Yves Veggie Cuisine® whole kernel Golden Corn and carrots
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Boil potatoes in pot of water until tender, about 15 minutes.
  • After draining thoroughly, return to the pot. Mix in margarine and half of the freshly ground pepper, then mash until smooth. Set the mixture aside.
  • Heat oil in a non-stick skillet over medium heat. Cook ground round, green pepper, and garlic, stirring occasionally for 5 minutes.
  • Add the flour and cook while stirring for 1 minute.
  • Pour the stock into the skillet and heat until it boils.
  • Add a colorful mixture of peas, corn, and carrots along with the rest of the ground pepper.
  • Spread the mixture evenly in an 8-inch square baking dish, then top with mashed potatoes.
  • Place your dish in the hot oven and bake for approximately 15 minutes, or until the edges are bubbling.
