Golden sweet potato and creamy ricotta soup toppers - ready in 15 minutes for a cozy winter meal.
Ingredients:
  • 1 gold sweet potato, cut lengthways into 5mm-thick slices
  • Smooth ricotta, to serve
  • Basil pesto or chimichurri, to serve
  • Flat-leaf parsley leaves, to serve
  • Toasted slivered almonds, to serve
  • Chopped toasted pistachios, to serve
  • Toasted pepitas (pumpkin seeds), to serve
Instructions:
  • Achieve a golden brown and tender sweet potato by cooking in batches in a toaster, or under a hot grill, turning occasionally.
  • Plate sweet potatoes. Top with a dollop of ricotta, drizzle with pesto or chimichurri, and sprinkle with almonds, pistachios, pepitas, and parsley. Accompany with soup.
