Sweet potato dip with white beans and chipotle peppers, a sweet and smoky appetizer perfect for dipping chips, pita, veggies, and crackers.
Ingredients:
  • 1 pound sweet potatoes
  • 2 shallots (about 1/4 pound), cut into 4 pieces each
  • 4 tablespoons olive oil, divided
  • 1 teaspoon sea salt
  • 1 15-ounce can (or 1 1/2 cups cooked ) white beans, drained (reserve the liquid) and rinsed
  • 1 to 2 chipotles in adobo sauce
  • 2 tablespoons lime juice
  • 1/4 cup cilantro, plus more for serving
  • For serving:
  • Chips
  • Chopped cilantro
Instructions:
  • For the sweet potato roast: Preheat the oven to 450 ̊F. Peel and cut sweet potatoes into 1 1/2-inch cubes. Spread sweet potatoes and shallots on a rimmed baking sheet, drizzle with 2 tablespoons of olive oil, and sprinkle with sea salt. Roast until sweet potatoes are tender, approximately 25 to 30 minutes.
  • Prepare the dip by blending roasted sweet potatoes, shallots, white beans, 2 tablespoons of olive oil, chipotles, lime juice, and cilantro in a food processor or blender. Add reserved bean liquid as necessary to achieve a smooth and thick consistency similar to hummus.
  • To serve the dip, enjoy it right away or refrigerate for later; serve chilled or at room temperature. Garnish with fresh cilantro on top and pair with your preferred tortilla chips or a variety of fresh vegetables.
