Delicious sweet potato casserole with mashed sweet potatoes and white raisins.
Ingredients:
  • 2 eggs, beaten
  • 0.5 cup white raisins, or more to taste
  • 0.33333334326744 cup milk
  • 1 teaspoon vanilla extract
  • 4.5 cups mashed cooked sweet potato
  • 0.5 cup all-purpose flour
  • 0.5 cup butter, softened
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine eggs, sugar, melted butter, raisins, milk, and vanilla extract in a large mixing bowl. Mix in mashed sweet potatoes until well combined. Spread the mixture into the prepared baking dish.
  • In a small bowl, combine brown sugar and flour. Use a fork to blend in the butter until crumbly. Stir in pecans. Sprinkle the mixture over the sweet potatoes.
  • Bake until beautifully golden brown, approximately 30 minutes in a preheated oven.
