Sweet Potato Zucchini Hash

Pan-fried sweet potatoes and zucchini with butter and brown sugar - simple and delicious!
Ingredients:
  • 3 tablespoons butter
  • 1 sweet potato, peeled and cubed
  • 2 tablespoons brown sugar
  • 1 zucchini, cut into cubes
Instructions:
  • In a skillet over medium heat, melt butter until sizzling. Toss sweet potatoes in the sizzling butter until fully coated, then sprinkle brown sugar and stir until blended.
  • Raise heat to medium-high and continue cooking and stirring until the brown sugar forms a luscious caramelized coating on the sweet potato cubes, for about 5 to 7 minutes.
  • Lower the heat to medium-low. Add the zucchini to the sweet potato mixture and cook until the zucchini is tender, about 5 to 10 minutes. Drain any excess liquid before serving.
