Colorful Zucchini and Sweet Potato Muffins - A fiber-filled delight for the whole family.
Ingredients:
  • 1 zucchini, grated
  • cooking spray
  • 1 sweet potato
  • 2 cups biscuit mix (such as Pioneer®)
  • 1.25 cups brown sugar
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon vanilla extract, or to taste
  • 1 pinch ground nutmeg
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C, gas mark 5) and generously coat muffin tins with cooking spray.
  • Microwave the sweet potato until tender, around 6 minutes. Peel and dice the sweet potato, then add it to a large bowl.
  • Combine the biscuit mix, brown sugar, milk, zucchini, eggs, margarine, cinnamon, vanilla extract, and nutmeg into the sweet potato mixture. Fill each muffin cup with 1/3 cup of batter.
  • Bake until a toothpick inserted in the center of a muffin comes out clean, about 25-30 minutes in the preheated oven.
