Sweet Potato-Cashew Bake

Spicy brown sugar glazed sweet potato casserole with cinnamon, ginger, nutmeg, and cashews. Perfect for festive feasts.
Ingredients:
  • 5 sweet potatoes, peeled and cut into 1/2 inch slices
  • 0.75 cup packed brown sugar
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground ginger
  • 0.125 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.25 cup butter, cut into pieces
  • 0.5 cup coarsely chopped cashews
  • 1 cup miniature marshmallows
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13 inch baking dish.
  • In a large pot, cover the sweet potatoes with water and bring to a boil. Cook until the potatoes are easily pierced with a fork, around 10 minutes. Drain and allow to cool.
  • Combine the brown sugar, cinnamon, ginger, nutmeg, and salt in a bowl, then fold in the cashews.
  • Layer half of the sweet potatoes in the baking dish. Sprinkle half of the brown sugar mixture on top. Place half of the butter pieces over the sweet potatoes. Repeat layers with remaining sweet potatoes, brown sugar mixture, and butter.
  • Bake in a preheated oven until the potatoes are caramelized with the brown sugar mixture, around 30 minutes. Sprinkle mini marshmallows on top and bake for an additional 5 minutes until they are golden brown.
