Sweet Tomato Relish

Family-favorite sweet tomato relish with tomatoes, sweet onions, and apples, passed down for generations.
Ingredients:
  • 15 ripe tomatoes - peeled, seeded, and chopped
  • 5 sweet onions, chopped
  • 4 Granny Smith apples - peeled, cored, and chopped
  • 2 cups white sugar
  • 5 fluid ounces white vinegar
  • 1 tablespoon pickling spice, bundled in cheesecloth
Instructions:
  • Check six pint-sized jars for cracks and rust on the rings, and discard any damaged jars. Submerge the jars in simmering water until the relish is done. Clean new lids and rings in warm, soapy water.
  • In a large pot, add tomatoes, onions, apples, sugar, vinegar, and pickling spice bundle. Bring to a boil and cook for approximately 10 minutes, stirring occasionally.
  • Fill hot, sterilized jars with relish, leaving 1/4 inch of space at the top. Use a clean knife or thin spatula to eliminate any air bubbles. Wipe rims with a moist paper towel to clean off any residue. Seal jars tightly with lids and screw rings.
  • Fill a large stockpot halfway with water and bring it to a boil. Carefully lower jars into the boiling water using a holder, ensuring they are 2 inches apart. Pour in additional boiling water to cover the jars by at least 1 inch. Cover the pot, bring it to a rolling boil, and process for 40 minutes.
  • After boiling, allow the jars to cool on a flat surface for 12 to 24 hours. Press the center of each lid to check for a secure seal, then remove the rings and store in a cool, dark place.
