Succulent swordfish with tomatoes, smoked paprika, and pine nuts - a flavorful delight.
Ingredients:
  • 3 tablespoons extra virgin olive oil
  • 1 pound swordfish or other firm, white fish
  • Salt
  • Flour for dusting
  • 2 cloves garlic, sliced thin
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons white wine
  • 4 Roma or other paste tomatoes, seeded and diced
  • 1/4 cup parsley, chopped
  • 2 teaspoons Spanish smoked paprika
  • Black pepper
Instructions:
  • Prepare the swordfish: Skin and cube the swordfish, season generously with salt, and lightly coat in flour.
  • Sear swordfish chunks until golden brown on both sides in a generously oiled sauté pan. Transfer the cooked swordfish to a bowl and set aside.
  • Create a flavorful sauce: Sauté garlic slices in the same pan as the fish until aromatic. Quickly add tomatoes, parsley, white wine, pine nuts, and paprika the moment the garlic starts to brown.
  • Toss the fish in the sauce and cook for 1 minute. Return swordfish to the pan, toss again, and cook for another 30 seconds. Serve immediately.
